  • 2 cups butternut squash, cubed
  • 8 oz fettuccine or penne pasta
  • 1/4 cup fresh sage leaves, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Toss butternut squash in olive oil, season with salt and pepper, then roast on a lined baking sheet for 25-30 minutes until tender.
  2. Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In a skillet, heat olive oil over medium heat. Sauté minced garlic and sage leaves for about 2 minutes until fragrant.
  4. Scoop roasted squash into the skillet, add heavy cream, and mash lightly to create a smooth sauce.
  5. Stir in cooked pasta and reserved pasta water until the desired consistency is reached. Mix well to coat the pasta.
  6. Serve garnished with freshly grated Parmesan cheese.
