  • 34 boneless, skinless chicken breasts
  • 1 cup buffalo sauce
  • 2 tbsp honey
  • 1 cup brown rice or quinoa
  • 1 cup fresh bell peppers, diced
  • 1 cup cucumbers, diced
  • 1 cup lettuce, shredded
  • ½ cup ranch dressing

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season the chicken breasts with salt and pepper and place them on the prepared baking sheet. Bake for about 25-30 minutes until cooked through.
  3. Remove from the oven and let cool slightly before shredding with two forks.
  4. In a small bowl, combine buffalo sauce and honey; adjust sweetness to taste.
