  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs
  • 3 cups fresh apples (Granny Smith or Honeycrisp), sliced
  • 1 tsp cinnamon
  • ¼ cup brown sugar
  • 1 cup rolled oats
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Press into the bottom of the pan.
  3. In another bowl, beat cream cheese until smooth. Add sour cream, vanilla extract, and remaining granulated sugar; blend well. Add eggs one at a time.
  4. Cook sliced apples in a skillet with brown sugar and cinnamon for about five minutes until tender.
  5. Pour half of the cheesecake mixture over the crust. Layer cooked apples on top and then add the remaining cheesecake batter.
  6. Bake for about one hour until edges are set but center is slightly jiggly. Turn off oven and let cool inside for one hour before removing.
