  • 34 lbs pork shoulder
  • 2 cups fresh unfiltered apple cider
  • 2 medium sweet onions, sliced
  • 4 cloves garlic, minced
  • 4 sprigs fresh thyme
  • 1 cup low-sodium chicken stock
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the pork shoulder generously with salt and pepper.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the pork on all sides until golden brown (4-5 minutes each side). Remove and set aside.
  4. Add sliced onions and minced garlic to the pot; sauté until translucent (3-4 minutes).
  5. Pour in apple cider, scraping down browned bits from the pot bottom. Stir in chicken stock and balsamic vinegar.
  6. Return the pork to the pot, adding thyme on top. Cover and braise in the oven for 3-4 hours or until fork-tender.
