  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar

  • 8 oz dark chocolate (70% cocoa), melted
  • 1 cup fresh raspberries

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a springform pan.
  2. In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of the pan to form the crust.
  3. Melt the dark chocolate in a heatproof bowl over simmering water; set aside to cool slightly.
  4. In another bowl, beat cream cheese until smooth, then add sugar and mix. Incorporate eggs one at a time, followed by vanilla and melted chocolate.
  5. Gently fold in half of the raspberries and pour over the crust.
  6. Bake for 50-60 minutes until set but slightly wobbly in the center. Cool in the oven for an hour before transferring to chill completely.
