  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 large eggs, at room temperature
  • 1 cup all-purpose flour
  • 2 tbsp instant coffee granules
  • 1 cup powdered sugar, sifted
  • 4 oz cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition.
  3. Stir in cocoa powder, flour, and instant coffee granules until just combined.
  4. Pour the batter into the prepared pan and bake for 20-25 minutes. A toothpick should come out with moist crumbs when done. Allow to cool completely.
  5. For the frosting, beat together softened cream cheese and powdered sugar until smooth. Mix in additional dissolved instant coffee for flavor.
