  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup finely chopped pecans
  • 8 oz chocolate coating (milk or dark)
  • Extra caramel sauce for drizzling
  • Remaining chopped pecans for sprinkling

Instructions

  1. In a mixing bowl, blend softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  2. Gently fold in half of the chopped pecans into the mixture.
  3. Scoop small amounts of the mixture (about one inch in diameter) and roll them into balls using slightly damp hands to prevent sticking.
  4. Place the truffles on a parchment-lined baking sheet.
  5. Freeze the truffles for about one hour to firm up.
  6. Melt the chocolate coating according to package instructions.
  7. Dip each chilled truffle into the melted chocolate, allowing excess chocolate to drip off before placing them back on the parchment paper.
  8. Drizzle extra caramel sauce over the coated truffles and sprinkle with remaining chopped pecans.
  9. Allow them to set at room temperature until the chocolate hardens.
