  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup whole milk
  • 2 large eggs
  • 2 tsp vanilla extract
  • 4 tbsp melted butter
  • 1/4 cup casting sugar (for caramelizing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In another bowl, beat eggs, milk, melted butter, and vanilla until smooth.
  4. Gradually mix wet ingredients into dry ingredients until just combined.
  5. Spoon the batter into the muffin pan until two-thirds full. Bake for 10-12 minutes or until golden brown.
  6. Allow to cool slightly before removing from the pan. Sprinkle casting sugar on top and use a kitchen torch to caramelize until golden brown.
