  • 1 (14.5 oz) can diced tomatoes in juice
  • 4 cups low-sodium beef broth
  • 1 tsp Italian seasoning
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add chopped onion, carrots, and celery; sauté for about 5 minutes until tender.
  3. Stir in diced potatoes and canned tomatoes with juice.
  4. Pour in the beef broth and enough water to cover all ingredients. Bring to a boil, then reduce heat.
  5. Add Italian seasoning, bay leaves, salt, and pepper. Simmer uncovered for 25-30 minutes until vegetables are soft.
