  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers (any color), diced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and bell peppers until soft (about 5 minutes).
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in cumin and chili powder; cook for about 30 seconds to release their flavors.
  4. Mix in black beans, kidney beans, corn, and diced tomatoes with juices; stir well.
  5. Bring to a gentle boil, then reduce heat to low. Simmer uncovered for 20-30 minutes, stirring occasionally.
