  • 1 cup ricotta cheese

  • 1 cup fresh baby spinach, washed
  • 2 tbsp unsalted butter

  1. Spread butter on one side of each slice of sourdough.
  2. In a bowl, combine ricotta cheese, chopped sun-dried tomatoes, and spinach. Mix until well incorporated.
  3. Place one slice of bread butter-side down in a skillet. Spoon half of the ricotta mixture onto it and top with another slice of bread, butter-side up.
  4. Heat the skillet over medium heat. Grill for 3-4 minutes until golden brown; flip and cook the other side until crispy and cheese melts.
