  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup tahini
  • 1/2 cup plain Greek yogurt
  • 1 tbsp freshly squeezed lemon juice
  • 1 garlic clove, minced
  • Water (as needed to adjust consistency)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and chop the assorted vegetables into bite-sized pieces. Spread them in a single layer on the baking sheet.
  3. Drizzle olive oil over the vegetables and season with salt and pepper; toss to coat evenly.
  4. Roast in the preheated oven for 25–30 minutes until golden brown and tender, flipping halfway through.
  5. In a bowl, mix tahini, Greek yogurt, minced garlic, lemon juice, and water; whisk until smooth.
  6. Once the veggies are done roasting, serve in bowls topped with tahini yogurt sauce.
