  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium fresh beets, roasted
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap whole beets in aluminum foil and roast on a baking sheet for 45-60 minutes until tender. Allow to cool before peeling.
  2. Rinse the chickpeas in cold water and set aside in a mixing bowl.
  3. Once cooled, cube the roasted beets and add them to the bowl with chickpeas along with crumbled feta.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Adjust seasoning as needed.
  5. Pour the dressing over the mixture, add chopped parsley, and gently toss until evenly coated.
  6. Serve immediately or refrigerate for an hour to enhance flavors.
