3–4 boneless, skinless chicken breasts
3 cloves fresh garlic, minced
1/4 cup honey
1/4 cup freshly squeezed lime juice
2 tbsp olive oil
2 tbsp low-sodium soy sauce
2 cups cooked rice (white or brown)
1 ripe avocado, diced
Instructions
In a bowl, whisk together honey, lime juice, minced garlic, olive oil, and soy sauce.
Place chicken in a resealable bag or shallow dish and pour marinade over it. Let marinate for at least 30 minutes.
Preheat your grill to medium-high heat or heat olive oil in a skillet over medium heat. Alternatively, preheat your oven to 400°F (200°C).
Remove chicken from marinade (reserve marinade) and cook on the grill or skillet for about 6-7 minutes per side until fully cooked (165°F internal temperature). If baking, place in the oven for about 20-25 minutes.
While chicken cooks, prepare rice according to package instructions.
Slice cooked chicken into strips. In each bowl, layer rice as a base followed by sliced chicken and diced avocado.
Bring reserved marinade to a boil if using raw chicken; drizzle over each bowl before serving.
