  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/4 cup honey
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp olive oil
  • 2 tbsp low-sodium soy sauce
  • 2 cups cooked rice (white or brown)
  • 1 ripe avocado, diced

Instructions

  1. In a bowl, whisk together honey, lime juice, minced garlic, olive oil, and soy sauce.
  2. Place chicken in a resealable bag or shallow dish and pour marinade over it. Let marinate for at least 30 minutes.
  3. Preheat your grill to medium-high heat or heat olive oil in a skillet over medium heat. Alternatively, preheat your oven to 400°F (200°C).
  4. Remove chicken from marinade (reserve marinade) and cook on the grill or skillet for about 6-7 minutes per side until fully cooked (165°F internal temperature). If baking, place in the oven for about 20-25 minutes.
  5. While chicken cooks, prepare rice according to package instructions.
  6. Slice cooked chicken into strips. In each bowl, layer rice as a base followed by sliced chicken and diced avocado.
  7. Bring reserved marinade to a boil if using raw chicken; drizzle over each bowl before serving.
