BBQ Chicken Stuffed Sweet Potatoes are a deliciously easy and nutritious dish, combining tender chicken in BBQ sauce with sweet, fluffy sweet potatoes for a satisfying meal.
Preheat your oven to 400°F (200°C). Prepare a baking dish with parchment paper or nonstick spray.
Place sweet potatoes in the baking dish and bake for about 45 minutes until tender; they should be easily pierced with a fork.
While sweet potatoes bake, shred cooked chicken (or use rotisserie chicken). In a bowl, mix shredded chicken with BBQ sauce until well-coated.
Once baked, slice sweet potatoes open lengthwise without cutting through. Fluff insides with a fork and spoon in BBQ chicken mixture. Top with shredded cheddar cheese.
Return stuffed potatoes to the oven for an additional 10-15 minutes until cheese is melted and bubbly.
