  • 12 oz fresh salmon fillet, diced
  • 1/2 cup mayonnaise
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1/4 cup chopped green onions
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with nonstick cooking spray.
  2. Spread the cooked sushi rice evenly across the bottom of the greased baking dish and press down gently.
  3. In a bowl, mix together diced salmon, mayonnaise, Sriracha sauce, and chopped green onions until well combined.
  4. Spread the salmon mixture evenly over the rice layer.
  5. Sprinkle panko breadcrumbs generously on top of the salmon mixture.
