1 lb sirloin or ribeye steak, cut into bite-sized pieces
12 oz cheese-filled tortellini (fresh or frozen)
4–5 cloves fresh garlic, minced
1 cup bell peppers (mixed red and yellow), chopped
1 medium onion, diced
2 tbsp olive oil
Salt and pepper to taste
1 tsp Italian seasoning
Instructions
Chop the steak into bite-sized pieces. Dice the onion and bell peppers. Mince the garlic.
In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add steak pieces and season with salt and pepper. Sear until browned on all sides (about 4-5 minutes). Remove from skillet and set aside.
In the same skillet, add another tablespoon of olive oil. Add diced onions and bell peppers; sauté until tender (3-4 minutes). Add minced garlic and sauté for an additional minute until fragrant.
Return the cooked steak to the skillet. Add cheese-filled tortellini and pour in half a cup of water or chicken broth to help steam everything together.
Sprinkle in Italian seasoning. Stir gently to combine all ingredients. Cover with a lid, reduce heat to medium-low, and let it simmer for about 5 minutes until tortellini is cooked through.
Once heated through, stir again before serving. Garnish with fresh herbs if desired.
