  • 1 cup jasmine rice
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 3 green onions, sliced
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 4 cups water

Instructions

  1. Chop chicken breasts into bite-sized pieces and mince garlic. Rinse jasmine rice under cold water until clear.
  2. In the crockpot, combine chopped chicken, rinsed rice, frozen vegetables, minced garlic, and sliced green onions.
  3. In a separate bowl, whisk together soy sauce and sesame oil; pour over ingredients in the crockpot.
  4. Add enough water to cover all ingredients (approximately 4 cups). Stir gently to mix.
  5. Cover and cook on low for about 5-6 hours or high for 2-3 hours until fully cooked.
  6. Stir well before serving and garnish with additional green onions.
