  • 2 ears fresh corn on the cob
  • 2 cups cucumber (about 1 large English cucumber), diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup crumbled feta cheese
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder

Instructions

  1. Prepare the corn by shucking it and removing silk. Boil in salted water for 5–7 minutes until tender. Remove and let cool.
  2. While cooling, dice the cucumber and red onion; combine in a large mixing bowl.
  3. Once corn has cooled, cut kernels off the cob and add to the bowl.
  4. Drizzle lime juice over the mixture and sprinkle with chili powder. Toss gently to combine.
  5. Fold in crumbled feta cheese carefully. Adjust seasoning if needed.
