  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup cucumbers, thinly sliced
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • Juice of 1 lime

Instructions

  1. Preheat grill or stovetop pan over medium-high heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side or until fully cooked. Let rest before slicing into strips.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, garlic, and lime juice until smooth. Add water gradually if needed for desired consistency.
  3. While the chicken rests, wash and slice the vegetables: bell peppers into strips, carrots into matchsticks, cucumbers into rounds.
  4. Lay out large lettuce leaves or tortillas. Place sliced chicken in the center followed by vegetables.
  5. Drizzle generously with peanut sauce.
  6. Roll each wrap tightly from one end to another. Secure with toothpicks if necessary and serve immediately.
