  • 4 ears fresh sweet corn (kernels removed)
  • 2 cups low-sodium vegetable broth
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic. Cut kernels off the fresh corn.
  2. Heat olive oil in a large pot over medium heat. Sauté the onion until translucent, about 5 minutes. Add garlic and cook for an additional minute.
  3. Stir in Arborio rice and toast for 1-2 minutes until slightly opaque.
  4. Gradually add warm vegetable broth one ladle at a time, stirring frequently until mostly absorbed before adding more. Continue for about 18-20 minutes or until creamy and al dente.
  5. Fold in sweet corn kernels and cook for another 5 minutes until heated through.
  6. Remove from heat; stir in Parmesan cheese and butter. Season with salt and pepper to taste.
