Savory Bang Bang Salmon Bowls with Refreshing Cucumber Salsa are a quick, vibrant meal that combines succulent salmon and zesty salsa for a delightful dining experience in under 30 minutes.

  • 2 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup mayonnaise
  • 2 tbsp Sriracha (adjust to taste)
  • 1 tbsp honey
  • 1 cup cooked brown rice (or jasmine/basmati)
  • 1 medium cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Bake for 12-15 minutes or until flaky.
  4. In a small bowl, whisk together mayonnaise, Sriracha, and honey until smooth. Adjust Sriracha according to your heat preference.
  5. In a bowl, combine diced cucumber, sliced red onion, chopped cilantro, lime juice, and salt. Stir well.
  6. Layer cooked brown rice in bowls.
  7. Top with baked salmon fillet and drizzle with bang bang sauce.
  8. Add cucumber salsa on top before serving.
