  • 1 lb pork sausage (mild or spicy)
  • 1 lb red potatoes (diced)
  • 1 cup bell peppers (chopped)
  • 1 medium onion (chopped)
  • 4 large eggs
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C). Dice the red potatoes and toss them with olive oil, salt, pepper, and any additional seasonings. Spread evenly on a baking sheet.
  2. In a skillet over medium heat, cook the pork sausage until browned (7-10 minutes) and set aside.
  3. Roast the potatoes in the oven for about 20 minutes until golden brown and tender.
  4. Sauté the chopped onions and bell peppers in the same skillet for around 5 minutes until softened.
  5. Mix cooked sausage with sautéed vegetables and roasted potatoes.
  6. In another pan, scramble the eggs until just set (3-4 minutes).
  7. Layer the sausage-potato mixture in bowls, top with scrambled eggs, and garnish as desired.
