  • 4 boneless, skinless chicken breasts
  • 6 cups fresh romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 ripe avocado, sliced
  • 1/2 red onion, thinly sliced
  • 3 tbsp fresh lime juice
  • 3 tbsp extra virgin olive oil
  • 2 tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or stovetop pan over medium-high heat. Season chicken with salt, pepper, and cumin. Grill for 6-7 minutes per side until fully cooked. Let rest before shredding.
  2. While the chicken cooks, wash and chop romaine lettuce. Halve cherry tomatoes and slice red onion. Combine all vegetables in a large bowl.
  3. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  4. Shred the cooked chicken and add it to the vegetable mix along with black beans and avocado.
  5. Pour dressing over salad ingredients and gently toss to combine. Serve immediately or chill before serving.
