  • 4 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 1 tbsp sesame oil (optional)
  • 6 cups mixed greens (romaine and spinach)
  • 1 cup shredded carrots
  • 1 cup crispy wonton strips
  • 2 tbsp toasted sesame seeds

Instructions

  1. In a bowl, combine soy sauce, minced garlic, honey, and sesame oil. Add chicken breasts and marinate for at least 30 minutes.
  2. Preheat grill or skillet over medium heat. Cook marinated chicken for about 6-7 minutes on each side until golden brown and fully cooked. Remove from heat and let rest before slicing.
  3. In a large bowl, mix together mixed greens and shredded carrots. Add any additional veggies if desired.
  4. Slice rested chicken into bite-sized pieces and add to the salad bowl.
  5. Top with crispy wonton strips and sprinkle with toasted sesame seeds.
