  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh broccoli florets
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts generously with salt and pepper. Place them in the prepared baking dish.
  3. Roast the chicken in the oven for about 25-30 minutes until cooked through (internal temperature should reach at least 165°F or 74°C).
  4. In a saucepan over medium heat, melt butter (2 tbsp recommended).
  5. Add minced garlic and sauté until fragrant.
  6. Pour in heavy cream and chicken broth; stir gently.
  7. Add grated Parmesan cheese and stir until melted and smooth.
  8. Stir in lemon juice, taste, and adjust seasoning as needed.
  9. Once the chicken is fully cooked, slice it and mix it into your creamy sauce along with the broccoli florets. Toss everything together until well-coated.
  10. Transfer to plates or meal prep containers. Drizzle with any remaining sauce before serving.
