Ingredients

Scale
  • 1/2 cup flour
  • 1/2 cup vegetable oil
  • 1 cup diced onions
  • 1 cup diced green bell peppers
  • 1 cup diced celery
  • 4 cloves garlic, minced
  • 1 pound Andouille sausage, sliced
  • 1 pound large shrimp, peeled and deveined
  • 1 pound lump crab meat
  • 2 cups okra (fresh or frozen)
  • 6 cups low-sodium chicken stock
  • 2 tablespoons Cajun seasoning

Instructions

  1. Prepare the roux by combining flour and oil in a heavy-bottom pot over medium heat. Stir continuously until it reaches a deep brown color (about 15-20 minutes).
  2. Add the diced onions, bell peppers, celery, and garlic to the roux. Sauté for 5-7 minutes until softened and fragrant.
  3. Stir in the sliced Andouille sausage and cook for an additional few minutes until browned.
  4. Gradually pour in chicken stock while stirring to prevent lumps; add okra and Cajun seasoning. Bring to a simmer and cook uncovered for 30 minutes.
  5. In the last five minutes, gently fold in shrimp and crab meat. Cook until just heated through.
