Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 2 large Russet potatoes
  • 1 cup shredded sharp cheddar cheese
  • 4 strips cooked bacon, crumbled
  • 2 tablespoons chopped fresh chives
  • Salt and pepper to taste
  • Sour cream for serving

Instructions

  1. Prepare the Dough: In a bowl, mix flour and a pinch of salt. Create a well, add the egg and water gradually, knead until smooth, and let it rest covered for 30 minutes.
  2. Cook Potatoes: Boil peeled and chopped potatoes in salted water for 15-20 minutes until fork-tender. Drain and mash.
  3. Make Filling: In a bowl, combine mashed potatoes, cheddar cheese, crumbled bacon, chives, salt, and pepper. Mix well and set aside.
  4. Roll Dough: On a floured surface, roll out the dough to 1/8-inch thickness. Cut into circles using a glass or cutter.
  5. Fill Pierogi: Place about one tablespoon of filling on each circle. Fold over and pinch edges tightly to seal.
  6. Cook Pierogi: Boil salted water in a large pot; drop pierogi in batches, cooking until they float (about 3-5 minutes). Remove with a slotted spoon.
