1/2 cup natural peanut butter
1/3 cup honey or maple syrup
1 cup unsweetened shredded coconut
1/4 cup unsweetened cocoa powder
2 tbsp chia seeds
Instructions
In a large mixing bowl, combine rolled oats, natural peanut butter, honey (or maple syrup), unsweetened shredded coconut, cocoa powder, and chia seeds. Stir until well combined.
Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up the mixture.
Once chilled, take about a tablespoon of the mixture and roll it into balls using your hands. They don’t have to be perfectly round!
For added texture, roll some balls in extra shredded coconut or crushed nuts if desired.
Place the energy balls in an airtight container and store them in the fridge for easy snacking throughout the week.
