  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 4 oz feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
  • 2 tbsp fresh parsley or cilantro, chopped

Instructions

  1. Rinse and drain chickpeas. Dice the avocado, cherry tomatoes, cucumber, and red onion.
  2. In a large mixing bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, and crumbled feta. Toss gently.
  3. Fold in the diced avocado carefully to maintain its texture.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad mixture and toss gently until evenly coated.
  6. Garnish with chopped herbs before serving.
