3–4 boneless, skinless chicken breasts
1 cup BBQ sauce (store-bought or homemade)
2 cups shredded cabbage (mix of red and green)
1 cup shredded carrots
1/2 cup mayonnaise
Salt and pepper to taste
4 large tortillas (whole wheat or flour)
Instructions
Preheat your grill or oven to medium-high heat (375°F or 190°C). Season chicken breasts with salt and pepper.
Grill chicken for about 6-7 minutes on each side until cooked through (internal temperature should reach 165°F). If baking, cook in a greased dish for approximately 25-30 minutes.
Let cooked chicken rest for five minutes, then shred it using two forks.
In a large bowl, combine shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise with salt and pepper. Add this dressing to the veggies and toss until evenly coated.
In another bowl, mix shredded chicken with half a cup of BBQ sauce until well-coated.
Take a tortilla and layer on some BBQ chicken followed by a generous scoop of coleslaw. Roll up tightly and slice in half if desired. Drizzle with extra BBQ sauce before serving.
