  • ½ cup unsalted butter, melted
  • 4 ripe peaches, sliced
  • ¾ cup granulated sugar (adjust based on fruit sweetness)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp pure vanilla extract
  • 3 large eggs, at room temperature

Instructions

  1. Preheat oven to 325°F (163°C). Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a greased springform pan. Bake for 10 minutes; cool.
  2. Beat cream cheese until smooth. Gradually add sugar, then mix in sour cream and vanilla. Add eggs one at a time, mixing until just combined.
  3. Toss peaches with remaining sugar in a bowl; let sit for 10 minutes.
  4. Layer half the cheesecake batter over the crust, then half the peaches. Repeat with remaining batter and peaches.
  5. Bake for 50-60 minutes until set but slightly jiggly in the center. Cool in the oven for an hour before refrigerating for at least four hours or overnight.
