  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 2 tbsp instant coffee granules
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan or line with parchment paper.
  2. In a bowl, mix melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time and stir in vanilla extract.
  3. In another bowl, whisk together cocoa powder, flour, coffee granules, and a pinch of salt. Gradually add to the wet mixture until just combined.
  4. Pour batter into the baking pan and bake for 20-25 minutes or until a toothpick comes out mostly clean.
  5. For frosting, combine softened butter, powdered sugar, and coffee granules until creamy.
  6. Once cooled, spread frosting over brownies, cut into squares, and serve.
