  • 12 oz potstickers (fresh or frozen)
  • 1 cup bell peppers (sliced; mix of red, yellow, and green)
  • 1 cup broccoli florets
  • 1 cup carrots (thinly sliced)
  • 2 cloves garlic (minced)
  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • 1 tbsp rice vinegar

Instructions

  1. Prepare your veggies by washing and chopping the bell peppers, broccoli, and carrots.
  2. In a large skillet over medium heat, add 1 tbsp vegetable oil. Once hot, cook potstickers in a single layer until golden brown on one side (about 3-4 minutes).
  3. Add minced garlic to the skillet and stir for about one minute until fragrant.
  4. Incorporate bell peppers, broccoli, and sliced carrots into the skillet. Stir-fry for about five minutes until veggies are tender-crisp.
  5. In a small bowl, whisk together soy sauce, sesame oil, and rice vinegar. Pour over the stir-fry.
  6. Toss everything together until evenly coated with sauce and cook for another two minutes before serving.
