Crispy Japanese Katsu Curry is a delightful combination of crunchy chicken and aromatic curry sauce, perfect for a comforting meal that transports you to Japan with every bite.

  • 2 large boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 1 medium onion, finely chopped
  • 1 medium carrot, diced
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 2 cups low-sodium vegetable broth
  • 2 tablespoons low-sodium soy sauce

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and gently pound to about half an inch thick. Season both sides with salt and pepper.
  2. Set up a breading station with three plates: one with flour, one with beaten eggs, and one with panko breadcrumbs. Coat each chicken breast in flour, dip into egg, then press into panko until fully covered.
  3. Heat vegetable oil in a large skillet over medium heat. Fry chicken breasts for about 4-5 minutes on each side until golden brown and cooked through. Transfer to paper towels to drain excess oil.
  4. In another pot, sauté chopped onions and minced garlic until softened.
  5. Add diced carrots and cook until they begin to soften.
  6. Sprinkle curry powder over the vegetables and stir for about one minute before adding vegetable broth and soy sauce. Allow it to simmer for approximately ten minutes.
  7. Slice the fried chicken into strips and spoon curry sauce over the top. Enjoy with steamed rice or crusty bread!
