  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ cup Caesar dressing (store-bought or homemade)
  • 2 cups romaine lettuce, chopped
  • 4 slices ciabatta or sourdough bread
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper. In one bowl, mix panko breadcrumbs and Parmesan cheese. In another bowl, combine garlic powder with a splash of olive oil.
  3. Coat each chicken breast in the garlic oil mixture, then dip into the breadcrumb mixture until fully covered.
  4. Place chicken on the baking sheet and bake for 20-25 minutes until golden brown and cooked through (internal temperature should reach at least 165°F/75°C).
  5. Let chicken rest for a few minutes before slicing into strips. Assemble by layering sliced chicken on toasted bread, adding Caesar dressing and romaine lettuce.
  6. Serve immediately while warm.
