  • 1 pound gnocchi (store-bought or homemade)
  • 4 cups fresh spinach
  • 1 can (14 oz) artichoke hearts, drained
  • 8 oz cream cheese
  • 2 cups shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, add spinach and cook until wilted (about 2-3 minutes). Remove from heat.
  3. In the same skillet, sauté garlic until fragrant (about 1 minute). Stir in cream cheese until melted, then add heavy cream and mix until smooth.
  4. Combine wilted spinach, drained artichokes, Italian seasoning, half of the mozzarella cheese, salt, and pepper into the sauce. Fold gently to combine.
  5. Add cooked gnocchi to the mixture and stir until coated evenly.
  6. Transfer to the baking dish, sprinkle remaining mozzarella on top, and bake for 25-30 minutes or until bubbly and golden brown.
