  • 2 lbs ripe Roma tomatoes, halved
  • 1 whole garlic bulb
  • 1 medium yellow onion, chopped
  • 3 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and place on the baking sheet with prepared tomatoes.
  3. Drizzle halved tomatoes with olive oil, salt, and pepper. Roast for 30-35 minutes until soft.
  4. In a pot, heat olive oil over medium heat and sauté chopped onions until translucent (about 5 minutes).
  5. Squeeze roasted garlic cloves into the pot. Add roasted tomatoes and vegetable broth; bring to a simmer.
