  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat and cook the chicken for 6-7 minutes per side until fully cooked. Remove from skillet and let rest.
  2. Cook the pasta according to package instructions until al dente; reserve 1 cup of pasta water before draining.
  3. In the same skillet, lower heat and sauté minced garlic for about one minute until fragrant.
  4. Add heavy cream and chicken broth to the skillet; stir and bring to a simmer. Mix in grated parmesan cheese and Italian seasoning until melted.
  5. Slice the cooked chicken into strips, return it to the skillet along with drained pasta, and toss everything together. If needed, add reserved pasta water to reach your desired consistency.
