  • 1 lb gnocchi (store-bought or homemade)
  • 1 medium butternut squash (about 2 cups roasted, pureed)
  • 8 oz Italian sausage (spicy or mild)
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 cup low-sodium vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Halve the butternut squash, scoop out the seeds, brush with olive oil, season with salt and pepper, and roast cut side down on a parchment-lined baking sheet for 25-30 minutes until tender. Scoop out the flesh.
  2. In a large skillet over medium heat, cook the sausage until browned (about 5-7 minutes). Remove excess grease if needed.
  3. Add minced garlic to the skillet with the sausage and sauté for one minute until fragrant.
  4. Blend roasted butternut squash flesh, heavy cream, vegetable broth, and Parmesan cheese until smooth. Pour into the skillet with sausage and garlic.
  5. Cook gnocchi according to package instructions in salted boiling water until they float. Drain and add to the skillet, stirring gently to combine.
  6. Serve warm, garnished with additional Parmesan if desired.
