  • 4 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 lb potato gnocchi
  • 1 cup heavy cream
  • 1 cup freshly grated Asiago cheese
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Sear chicken for 6-7 minutes on each side until golden brown. Remove from skillet and let rest.
  2. In the same skillet, boil water and cook gnocchi according to package instructions (about 2-3 minutes). Drain and set aside.
  3. Lower heat, add minced garlic to the skillet, and sauté for about 30 seconds. Pour in heavy cream and chicken broth; stir to combine and bring to a simmer.
  4. Stir in Asiago cheese until melted. Season with salt and pepper.
  5. Return cooked chicken and gnocchi to the skillet; toss gently until coated.
  6. Add spinach and cook until wilted (about 1 minute). Serve with extra sauce drizzled on top.
