3–4 boneless, skinless chicken breasts
1 cup chopped Hatch green chilies (canned or fresh)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
2 tsp cumin
2 tsp garlic powder
2 tsp paprika
8 corn or flour tortillas
1 cup sour cream (for dipping)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large skillet over medium heat, add olive oil and cook the chicken breasts for about 5-7 minutes per side until golden brown. Remove from heat and shred.
In a large bowl, combine shredded chicken, chopped Hatch chilies, cheddar cheese, Monterey Jack cheese, cumin, garlic powder, and paprika. Mix well.
Warm tortillas in the microwave for about 15 seconds to make them pliable.
Spoon approximately two tablespoons of the filling onto each tortilla and roll tightly.
Place taquitos seam-side down on the prepared baking sheet. Lightly spray with cooking spray for extra crispiness.
