  • 1 cup heavy cream

  • Salt and pepper to taste
  • 2 tbsp unsalted butter

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and set aside, reserving 1 cup of pasta water.
  2. In a skillet over medium heat, melt butter and sauté minced garlic for about 1 minute until fragrant.
  3. Stir in pumpkin puree and heavy cream, letting it simmer gently for 3-4 minutes.
  4. Gradually whisk in Parmesan cheese until melted. Season with nutmeg, salt, and pepper.
  5. Add the cooked pasta to the sauce, tossing to coat evenly. If needed, add reserved pasta water to reach desired consistency.
