  • 2 cups fresh mushrooms (button and cremini)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp sweet paprika
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 2 tbsp fresh dill, chopped

Instructions

  1. In a large pot over medium heat, melt 2 tablespoons of butter.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the sliced mushrooms to the pot and stir frequently until they reduce in size and release moisture, approximately 10 minutes.
  5. Sprinkle in the sweet paprika along with salt and pepper to taste. Mix well and let it cook for an additional 2 minutes to develop flavors.
  6. Pour in the vegetable broth and bring to a gentle simmer. Let it bubble for about 15 minutes.
  7. Lower the heat and stir in the heavy cream, allowing it to heat through without boiling, about 5 minutes.
  8. Taste and adjust seasoning if necessary; serve hot garnished with fresh dill.
