1 lb lean ground beef (80/20)
1 cup long-grain white rice
2 large sweet yellow onions, sliced
2 cups low-sodium beef broth
1 cup shredded Swiss cheese
1 cup shredded mozzarella cheese
1 tsp garlic powder
1 tsp dried thyme
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C). Lightly spray a large baking dish with nonstick cooking spray.
In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease and season with garlic powder, salt, pepper, and thyme.
In the same skillet, add sliced onions. Cook on medium-low heat for about 10-15 minutes until caramelized, stirring occasionally.
In your prepared baking dish, mix together cooked rice, browned beef, caramelized onions, and beef broth until evenly combined.
Top the mixture with shredded Swiss and mozzarella cheeses. Sprinkle extra thyme if desired.
