This creamy chicken parmesan soup is a warm embrace in a bowl, perfect for busy weeknights and packed with rich flavors.

Ingredients

  • 34 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, cut into chunks
  • 1 cup freshly grated parmesan cheese
  • 2 tsp dried Italian herbs (basil, oregano, thyme)

Instructions

  1. Chop the onion and mince the garlic.
  2. Place the chicken breasts at the bottom of your crock pot. Add the chopped onions and minced garlic on top.
  3. Pour the chicken broth over the layered ingredients until they are just submerged.
  4. Dollop chunks of cream cheese on top of the broth mixture.
  5. Cover and cook on low for about 6 hours or high for 4 hours.
  6. Once cooked, shred the chicken using two forks. Stir in grated parmesan cheese and dried Italian herbs until well combined.
