  • 3 medium carrots, chopped
  • 3 medium Yukon Gold potatoes, cubed

  • 4 cloves garlic, minced

  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste

  4. Bring to a boil, then reduce heat to low and cover. Simmer for about 2 hours, stirring occasionally.
