  • 3 lbs boneless pork shoulder
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1/4 cup apple cider vinegar
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 2 tbsp brown sugar
  • Salt and pepper to taste
  • Coleslaw for crunch
  • Fresh cilantro or parsley for garnish

Instructions

  1. Gather all ingredients. Slice the onion and mince the garlic.
  2. In a bowl, combine paprika, cumin, brown sugar, salt, and pepper.
  3. Rub the spice mixture all over the boneless pork shoulder, ensuring even coverage.
  4. Place sliced onions at the bottom of the slow cooker. Lay the seasoned pork shoulder on top and pour in apple cider vinegar along with half of your barbecue sauce.
  5. Cover and cook on low for about 8 hours or high for 4 hours until fork-tender.
  6. Remove pork from the slow cooker and shred it using two forks. Toss shredded pork with remaining barbecue sauce before serving.
