  • ½ cup unsalted butter, chilled and diced
  • 1/4 tsp salt
  • 3 to 4 tbsp ice water
  • 4 to 6 ripe peaches, sliced (about 6 cups)
  • ¾ cup granulated sugar (adjust based on peach sweetness)
  • 2 tbsp all-purpose flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • Juice of half a lemon (optional)

Instructions

  1. In a bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Stir in ice water, one tablespoon at a time, until dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Roll out half of the chilled dough on a floured surface and place it in a pie dish.
  4. Preheat oven to 425°F (220°C).
  5. In a large bowl, combine sliced peaches, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat.
  6. Pour the peach mixture into the prepared crust.
  7. Roll out the second half of the dough and place it over the filling. Seal edges well.
  8. Cut slits into the top crust for venting.
  9. Bake for about 45-50 minutes or until golden brown.
