1 pound boneless chicken thighs
2 medium carrots, sliced
2 stalks celery, sliced
1 medium onion, diced
3 cloves garlic, minced
1 tsp dried thyme
Salt and pepper to taste

Instructions
Prepare Your Ingredients: Chop the vegetables into bite-sized pieces and mince the garlic.
Sauté the Veggies: In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent (about 3 minutes). Add carrots and celery; cook for another 5 minutes until softened.
Add Garlic & Chicken: Stir in minced garlic for about 1 minute. Add boneless chicken thighs to the pot and lightly sear on both sides for about 5 minutes.
