  • 4 cups low-sodium chicken broth
  • 1 pound boneless chicken thighs
  • 2 medium carrots, sliced
  • 2 stalks celery, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare Your Ingredients: Chop the vegetables into bite-sized pieces and mince the garlic.
  2. Sauté the Veggies: In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent (about 3 minutes). Add carrots and celery; cook for another 5 minutes until softened.
  3. Add Garlic & Chicken: Stir in minced garlic for about 1 minute. Add boneless chicken thighs to the pot and lightly sear on both sides for about 5 minutes.
  4. Pour in Broth & Season: Add chicken broth, dried thyme, salt, and pepper. Bring to a gentle boil before reducing to a simmer.
  5. Let It Simmer: Cover the pot and simmer on low heat for approximately 30 minutes until flavors meld together.
  6. Serve & Enjoy: Once chicken is fully cooked (165°F), shred it in the pot using two forks. Serve hot, garnished with fresh herbs or croutons if desired.
